I'd like to format my messages but I can't seem to remember the HTML tags for the life of me!?

Ha! You pathetic loser! :P Just as well we have a feature just for the likes of you. Click on UserCP, select Edit Options, scroll down to Misc. Options and select either Standard Editor or Enhanced Interface for the Messaging Interface.
